10 Minute Spinach and Feta Breakfast Quesadilla

A quick and delicious breakfast option that combines spinach, feta cheese, and tortillas for a satisfying start to your day.

Ingredients

  • 2 large flour tortillas
  • 1 cup fresh spinach, chopped
  • 1/2 cup feta cheese, crumbled
  • 2 large eggs
  • 1 tablespoon olive oil
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a bowl, whisk the eggs with salt and pepper.
  2. Heat olive oil in a pan over medium heat.
  3. Add the spinach and sauté until wilted.
  4. Pour in the eggs and scramble until just set.
  5. Lay one tortilla in the pan, sprinkle half of the feta cheese, then add the scrambled egg and spinach mixture, and top with the remaining cheese.
  6. Cover with the second tortilla and cook until golden brown on one side, then flip and cook the other side.
  7. Remove from pan, cut into wedges, and serve hot.
