Ingredients

  • 2 medium acorn squash
  • 1 cup cooked quinoa
  • ½ cup shredded cheddar cheese
  • ¼ cup grated Parmesan cheese
  • ½ cup chopped onions
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons olive oil
  • ½ cup vegetable broth

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Halve the acorn squashes and scoop out the seeds.
  3. Brush the insides with olive oil and season with salt and pepper.
  4. Place the squashes cut-side down on a baking sheet and roast for 25 minutes.
  5. In a skillet, heat olive oil and sauté onions and garlic until softened.
  6. Add cooked quinoa, thyme, broth, and half of each cheese; mix well.
  7. Fill each roasted squash half with the quinoa mixture.
  8. Top with remaining cheeses and bake for an additional 15 minutes.
  9. Let cool slightly before serving.

Notes

  • For added flavor, you can sprinkle some breadcrumbs on top before the final bake.
  • This dish can be made ahead of time and baked right before serving.
