African Peanut Stew

  • 2 cups vegetable broth
  • 1 can diced tomatoes
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 sweet potatoes, diced
  • 1 cup spinach
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon cayenne pepper (optional)
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté until soft.
  2. Add ginger, cumin, paprika, and cayenne pepper, and stir for 1 minute.
  3. Add diced sweet potatoes and vegetable broth, bring to a boil.
  4. Reduce heat and simmer until sweet potatoes are tender.
  5. Stir in peanut butter, diced tomatoes, and spinach. Cook for another 5 minutes.
  6. Season with salt and pepper to taste.
