  • 1 pound chicken breast, cut into pieces
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon turmeric powder
  • 4 cups chicken broth
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 cup kale, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon lemon juice

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the chicken breast pieces and cook until browned.
  3. Stir in the onion, garlic, and ginger; sauté until the onion is translucent.
  4. Add turmeric, chicken broth, carrots, and celery; bring to a boil.
  5. Reduce heat and simmer for about 20 minutes.
  6. Add kale, salt, and pepper, cooking for an additional 5 minutes.
  7. Stir in lemon juice before serving.

  • For extra flavor, consider adding a bay leaf while simmering.
