- 3 pounds beef short ribs
- 2 cups apple cider
- 1 large onion, diced
- 2 carrots, chopped
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 2 sprigs fresh thyme
- 2 cups beef broth
- Salt and pepper to taste
- Preheat your oven to 325°F (160°C).
- Season the short ribs with salt and pepper.
- In a large Dutch oven, heat the olive oil over medium-high heat.
- Brown the short ribs on all sides, then remove them and set aside.
- Add the onion, carrots, and garlic to the same pot and sauté until softened.
- Pour in the apple cider and beef broth, scraping the bottom of the pot to deglaze.
- Return the short ribs to the pot along with the thyme.
- Cover and transfer to the oven, cooking for 2.5 to 3 hours until the meat is tender.
