Apple Cider Braised Short Ribs

An easy recipe for tender and flavorful apple cider braised short ribs that promise comfort food perfection.

  • 3 pounds beef short ribs
  • 2 cups apple cider
  • 1 large onion, diced
  • 2 carrots, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 sprigs fresh thyme
  • 2 cups beef broth
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Season the short ribs with salt and pepper.
  3. In a large Dutch oven, heat the olive oil over medium-high heat.
  4. Brown the short ribs on all sides, then remove them and set aside.
  5. Add the onion, carrots, and garlic to the same pot and sauté until softened.
  6. Pour in the apple cider and beef broth, scraping the bottom of the pot to deglaze.
  7. Return the short ribs to the pot along with the thyme.
  8. Cover and transfer to the oven, cooking for 2.5 to 3 hours until the meat is tender.
  9. Serve hot with your favorite sides.

Notes

  • Serve with mashed potatoes or green beans for a complete meal.
  • Leftovers are even better the next day as the flavors develop.
