Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together flour, sugar, baking powder, cinnamon, and salt.
  3. In another bowl, whisk together melted butter, eggs, milk, and vanilla extract.
  4. Combine the wet and dry ingredients until just mixed, then fold in the diced apples.
  5. In a separate bowl, mix together brown sugar, flour, cinnamon, and cold butter to create the streusel topping.
  6. Fill muffin cups about 2/3 full with muffin batter and sprinkle streusel on top.
  7. Bake for 20-25 minutes or until a toothpick inserted comes out clean.
  8. Let cool for a few minutes before transferring to a wire rack.
