  • 1/2 cup milk
  • 1 large egg

  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup apples, peeled and diced
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake tin with liners.
  2. In a mixing bowl, cream together the butter, granulated sugar, and brown sugar until fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. In another bowl, whisk together the flour, cinnamon, nutmeg, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, alternating with the milk.
  6. Fold in the diced apples and walnuts if using.
  7. Fill the cupcake liners about 2/3 full with the batter.
  8. Bake for 18-20 minutes or until a toothpick comes out clean.
  9. Let cool and serve with a dusting of powdered sugar if desired.

Notes

  • For a richer flavor, add a pinch of allspice.
  • These cupcakes are best enjoyed fresh but can be stored.
