Baked Potato Soup

A creamy and hearty baked potato soup topped with turkey bacon and chicken ham for an indulgent comfort meal.

Ingredients

  • 4 large russet potatoes
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup turkey bacon, cooked and crumbled
  • 1 cup chicken ham, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and pierce the potatoes with a fork. Bake them for about 1 hour until tender.
  3. In a large pot, heat olive oil over medium heat. Add chopped onion and garlic, sauté until translucent.
  4. Remove the baked potatoes from the oven, let cool slightly, then scoop out the insides and add to the pot.
  5. Pour in the chicken broth and heavy cream, stir well, and simmer for 10 minutes.
  6. Use an immersion blender to blend the soup until smooth, or blend in batches in a traditional blender.
  7. Stir in the crumbled turkey bacon, diced chicken ham, and cheddar cheese until melted and combined.
  8. Season with salt and pepper to taste.
  9. Serve hot, garnished with additional turkey bacon and cheese if desired.

Notes

  • For extra flavor, add chopped green onions or chives as a garnish.
  • This soup is very filling, so a small serving goes a long way!
