  • 4 large baked potatoes
  • 4 slices turkey bacon
  • 4 large eggs
  • 1 cup shredded cheese
  • 1/4 cup green onions, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Slice the baked potatoes in half and scoop out some of the flesh.
  3. Cook the turkey bacon in a skillet until crispy, then chop.
  4. Fill each potato half with cheese, bacon, and a cracked egg.
  5. Season with salt and pepper, then bake for 15-20 minutes until the eggs are set.
  6. Garnish with chopped green onions before serving.
