Baked Southwest Chicken Casserole

A deliciously comforting baked southwest chicken casserole made easy with turkey bacon and packed with flavor.

Ingredients

  • 1 pound chicken breast, cooked and shredded
  • 8 ounces turkey bacon, chopped
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup salsa
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 2 cups shredded cheese, your choice
  • 1 bell pepper, diced
  • 1 onion, diced
  • 1 jalapeño, diced (optional)
  • 9 tortillas, cut into strips

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine chicken, turkey bacon, black beans, corn, salsa, cumin, chili powder, bell pepper, onion, and jalapeño.
  3. Layer half of the tortilla strips on the bottom of a greased baking dish.
  4. Spread half of the chicken mixture over the tortillas.
  5. Top with half of the cheese.
  6. Repeat with the remaining tortilla strips, chicken mixture, and cheese.
  7. Bake for 30-35 minutes until heated through and cheese is melted.
  8. Let it cool for a few minutes before serving.

Notes

  • This dish can be topped with fresh cilantro or green onions if desired.
  • Feel free to adjust spice levels by adding more or less jalapeño.
