- 1 pound chicken breast, cooked and shredded
- 8 ounces turkey bacon, chopped
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 cup salsa
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 2 cups shredded cheese, your choice
- 1 bell pepper, diced
- 1 onion, diced
- 1 jalapeño, diced (optional)
- 9 tortillas, cut into strips
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine chicken, turkey bacon, black beans, corn, salsa, cumin, chili powder, bell pepper, onion, and jalapeño.
- Layer half of the tortilla strips on the bottom of a greased baking dish.
- Spread half of the chicken mixture over the tortillas.
- Top with half of the cheese.
- Repeat with the remaining tortilla strips, chicken mixture, and cheese.
- Bake for 30-35 minutes until heated through and cheese is melted.
- Let it cool for a few minutes before serving.
Notes
- This dish can be topped with fresh cilantro or green onions if desired.
- Feel free to adjust spice levels by adding more or less jalapeño.
