Balsamic Steak Gorgonzola Salad with Grilled Corn

A delicious and hearty salad featuring balsamic-marinated steak, creamy gorgonzola cheese, and sweet grilled corn.

Ingredients

  • 1 pound flank steak
  • 4 cups mixed greens
  • 1 cup cherry tomatoes, halved
  • 1/2 cup gorgonzola cheese, crumbled
  • 2 ears corn, husked and grilled
  • 1/4 cup balsamic vinaigrette
  • Salt and pepper to taste

Instructions

  1. Marinate the flank steak in balsamic vinaigrette for at least 30 minutes.
  2. Grill the steak for 6-8 minutes on each side until desired doneness.
  3. Remove steak from grill and let it rest before slicing thinly.
  4. Grill the corn until charred, then slice the kernels off the cob.
  5. In a large bowl, combine mixed greens, cherry tomatoes, sliced steak, corn, and gorgonzola cheese.
  6. Drizzle with remaining balsamic vinaigrette and toss gently to combine.
