- 1 cup rolled oats
- 1/2 cup protein powder
- 1/4 cup honey or maple syrup
- 1/2 cup Greek yogurt
- 2 eggs
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- 1/4 tsp salt
- Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
- In a mixing bowl, mash the ripe bananas well.
- Add the oats, protein powder, honey, Greek yogurt, and eggs to the mashed bananas. Mix until fully combined.
- In a separate bowl, whisk together the baking powder, baking soda, cinnamon, and salt.
- Gradually combine the dry ingredients with the wet ingredients, stirring until just mixed.
- Pour the batter into the prepared muffin tin, filling each liner about 2/3 full.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Allow to cool for a few minutes before transferring to a wire rack.
