Banana Protein Muffins

  • 3 ripe bananas
  • 1 cup rolled oats
  • 1/2 cup protein powder
  • 1/4 cup honey or maple syrup
  • 1/2 cup Greek yogurt
  • 2 eggs
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a mixing bowl, mash the ripe bananas well.
  3. Add the oats, protein powder, honey, Greek yogurt, and eggs to the mashed bananas. Mix until fully combined.
  4. In a separate bowl, whisk together the baking powder, baking soda, cinnamon, and salt.
  5. Gradually combine the dry ingredients with the wet ingredients, stirring until just mixed.
  6. Pour the batter into the prepared muffin tin, filling each liner about 2/3 full.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Allow to cool for a few minutes before transferring to a wire rack.

Notes

  • These muffins can be stored in an airtight container for up to 5 days.
  • For added flavor, consider adding nuts or chocolate chips to the batter.
