- 1 pound ground beef
- 1 can black beans, drained and rinsed
- 1 cup corn
- 1 cup enchilada sauce
- 8 tortillas
- 1 cup shredded cheddar cheese
- 1 teaspoon cumin
- 1 teaspoon chili powder
- ½ teaspoon garlic powder
- 1 onion, diced
- In a skillet, cook the ground beef and diced onion over medium heat until browned.
- Add black beans, corn, cumin, chili powder, and garlic powder to the skillet and stir.
- Pour in the enchilada sauce and mix well.
- Place tortillas in the skillet, folding them over the filling.
- Sprinkle cheddar cheese over the top and cover until cheese is melted.
- Serve hot.
