Beef Skillet Enchiladas

A comforting and easy-to-make dish that combines juicy beef with delicious enchiladas.

Ingredients

  • 1 pound ground beef
  • 1 can black beans, drained and rinsed
  • 1 cup corn
  • 1 cup enchilada sauce
  • 8 tortillas
  • 1 cup shredded cheddar cheese
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • ½ teaspoon garlic powder
  • 1 onion, diced

Instructions

  1. In a skillet, cook the ground beef and diced onion over medium heat until browned.
  2. Add black beans, corn, cumin, chili powder, and garlic powder to the skillet and stir.
  3. Pour in the enchilada sauce and mix well.
  4. Place tortillas in the skillet, folding them over the filling.
  5. Sprinkle cheddar cheese over the top and cover until cheese is melted.
  6. Serve hot.

Notes

  • For extra flavor, add some jalapeños or other spices as desired.
