  • 4 slices turkey bacon
  • 1 cup diced chicken ham
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes
  • 4 cups chicken broth
  • 1 cup green beans, chopped
  • 1 cup zucchini, diced
  • 1 can (15 ounces) cannellini beans, drained and rinsed
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt to taste
  • Black pepper to taste
  • 1 cup small pasta (like ditalini)

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  2. In the same pot, add olive oil and sauté onion, carrots, and celery until soft.
  3. Add garlic and cook for another minute.
  4. Stir in the diced tomatoes, chicken broth, green beans, zucchini, and cannellini beans.
  5. Add oregano, basil, salt, and pepper. Bring to a boil.
  6. Add small pasta and cooked turkey bacon, reduce heat, and simmer until pasta is tender.
  7. Serve hot.

Notes

  • This soup can be made ahead of time and tastes even better the next day.
  • Feel free to add any vegetables you have on hand.
