- 4 slices turkey bacon
- 1 cup diced chicken ham
- 1 tablespoon olive oil
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 can (14.5 ounces) diced tomatoes
- 4 cups chicken broth
- 1 cup green beans, chopped
- 1 cup zucchini, diced
- 1 can (15 ounces) cannellini beans, drained and rinsed
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt to taste
- Black pepper to taste
- 1 cup small pasta (like ditalini)
- In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
- In the same pot, add olive oil and sauté onion, carrots, and celery until soft.
- Add garlic and cook for another minute.
- Stir in the diced tomatoes, chicken broth, green beans, zucchini, and cannellini beans.
- Add oregano, basil, salt, and pepper. Bring to a boil.
- Add small pasta and cooked turkey bacon, reduce heat, and simmer until pasta is tender.
- Serve hot.
