  • 2 cups all-purpose flour
  • 1 cup fresh blueberries
  • 1/2 cup sugar
  • 1/4 cup milk
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix the cottage cheese, milk, eggs, and vegetable oil until well combined.
  3. In another bowl, combine the flour, sugar, baking powder, and salt.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
  5. Gently fold in the blueberries.
  6. Pour the batter into a greased muffin tin, filling each cup about 2/3 full.
  7. Bake for 25-30 minutes or until a toothpick comes out clean.
  8. Let cool before serving.

Notes

  • For best results, use fresh blueberries.
  • You can substitute Greek yogurt for cottage cheese if desired.
