  • 1/2 cup cream cheese, softened
  • 1/2 cup unsalted butter, melted
  • 1 cup fresh blueberries
  • 2 large eggs
  • 1/2 cup milk
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the flour, sugar, baking powder, and salt.
  3. In another bowl, beat together the cream cheese, melted butter, eggs, milk, and vanilla extract until smooth.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
  5. Gently fold in the blueberries.
  6. Divide the batter evenly among the muffin cups.
  7. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow to cool for a few minutes in the pan before transferring to a wire rack to cool completely.

Notes

  • For an extra burst of flavor, add a sprinkle of lemon zest to the batter.
  • You can use frozen blueberries, but do not thaw them before mixing into the batter.
