  • 1 cup shredded cheddar cheese
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 3 tablespoons butter
  • 5 tablespoons all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large pot, melt butter over medium heat. Add onion and garlic, cooking until fragrant.
  2. Stir in flour and cook for 1-2 minutes.
  3. Gradually add vegetable broth, stirring continuously to avoid lumps.
  4. Bring to a simmer, then add broccoli.
  5. Cook for 10-15 minutes until broccoli is tender.
  6. Stir in heavy cream and cheddar cheese until melted.
  7. Season with salt and pepper, then serve warm.

Notes

  • For a thicker soup, blend part of it and mix it back in.
  • Garnish with additional cheese before serving.
