- 2 cups broccoli florets
- 1 cup diced potatoes
- 1 cup shredded cheddar cheese
- 4 cups vegetable broth
- 1 cup heavy cream
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until soft.
- Add the diced potatoes and vegetable broth. Bring to a boil and cook for about 15 minutes or until potatoes are tender.
