  • 1 cup diced potatoes
  • 1 cup shredded cheddar cheese
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until soft.
  2. Add the diced potatoes and vegetable broth. Bring to a boil and cook for about 15 minutes or until potatoes are tender.
  3. Stir in the broccoli florets and cook for another 5 minutes.
