  • 8 ounces pasta of your choice
  • 1/2 cup unsalted butter
  • 1/4 cup fresh sage leaves
  • 1/2 cup grated Parmesan cheese
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss the diced butternut squash with olive oil, salt, and pepper and roast it in the oven until tender.
  3. Cook the pasta according to package instructions. Reserve some pasta water before draining.
  4. In a skillet, melt the butter over medium heat until it begins to brown. Add the sage leaves and cook until crispy.
  5. Combine the cooked pasta, roasted butternut squash, and brown butter in a large bowl. Toss to combine, adding reserved pasta water as needed.
  6. Finish with grated Parmesan and season with additional salt and pepper to taste.
