  • 4 cups vegetable broth
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • ½ teaspoon nutmeg
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • ½ cup coconut milk

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, sauté until softened.
  3. Add butternut squash, vegetable broth, ginger, cinnamon, and nutmeg; bring to a boil.
