  • 1 pound shrimp, peeled and deveined
  • 4 slices turkey bacon, chopped
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 bell pepper, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons Cajun seasoning
  • 1 tablespoon olive oil
  • Salt and pepper, to taste

Instructions

  1. In a large skillet, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  2. In the same skillet, add olive oil and sauté the onions, bell peppers, and garlic until softened.
  3. Add the rice and Cajun seasoning, stirring to combine.
  4. Pour in the chicken broth and bring to a boil.
  5. Reduce heat to low, cover, and simmer for 15 minutes.
  6. Stir in the shrimp and bacon, cooking until the shrimp are pink and cooked through, about 5 minutes.
  7. Season with salt and pepper to taste.
