  • 1 pound pasta of choice
  • 2 tablespoons chilli oil
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh parsley, chopped
  • Freshly cracked pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add onions and salt, cooking until caramelized and golden brown, about 20-25 minutes.
  3. Meanwhile, cook pasta according to package instructions until al dente.
  4. Drain pasta and reserve 1 cup of pasta water.
  5. Add cooked pasta to the skillet with caramelized onions.
  6. Pour in chilli oil and some reserved pasta water, stirring to combine.
  7. Mix in Parmesan cheese and parsley, adjusting consistency with more pasta water if necessary.
  8. Season with freshly cracked pepper and serve immediately.
