  • 2 cups long-grain rice
  • 1 pound chicken thighs
  • 1 cup chicken broth
  • 1 cup coconut milk
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 teaspoon thyme
  • 1 teaspoon allspice
  • 1 bell pepper, chopped
  • 1 cup frozen peas
  • 2 tablespoons vegetable oil
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a large pot, heat the vegetable oil over medium heat.
  2. Add the onion, garlic, and ginger; sauté until fragrant.
  3. Add the chicken thighs and brown on all sides.
  4. Stir in the rice, chicken broth, coconut milk, thyme, allspice, and bell pepper.
  5. Bring to a boil, reduce heat, and cover; simmer for 20-25 minutes.
  6. Stir in the peas during the last 5 minutes of cooking.
  7. Remove from heat and let sit for 5 minutes before serving.
