- 2 cups long-grain rice
- 1 pound chicken thighs
- 1 cup chicken broth
- 1 cup coconut milk
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon ginger, grated
- 1 teaspoon thyme
- 1 teaspoon allspice
- 1 bell pepper, chopped
- 1 cup frozen peas
- 2 tablespoons vegetable oil
- Salt to taste
- Black pepper to taste
- In a large pot, heat the vegetable oil over medium heat.
- Add the onion, garlic, and ginger; sauté until fragrant.
- Add the chicken thighs and brown on all sides.
- Stir in the rice, chicken broth, coconut milk, thyme, allspice, and bell pepper.

- Stir in the peas during the last 5 minutes of cooking.
