Cheesy Cauliflower Soup

A delicious and creamy cheddar cauliflower soup enhanced with the savory flavor of turkey bacon.

  • 1 head cauliflower, chopped
  • 4 slices turkey bacon, chopped
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 cups shredded cheddar cheese
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  2. In the same pot, add the onion and garlic, sautéing until translucent.
  3. Add the chopped cauliflower and vegetable broth, bringing to a boil.
  4. Reduce heat and simmer until cauliflower is tender, about 10 minutes.
  5. Puree the soup using an immersion blender.
  6. Stir in the cheddar cheese and heavy cream, cooking until cheese is melted and the soup is creamy.
  7. Season with salt and pepper, then serve topped with crispy turkey bacon.
