Instructions

  1. Start by cooking the chicken thighs in the chicken broth until fully cooked.
  2. Remove the chicken, shred it, and set aside.
  3. In a separate bowl, mix the flour, baking powder, and salt.
  4. Cut in the butter until the mixture resembles coarse crumbs.
  5. Add the milk and stir until just combined.
  6. In a large pot, sauté the carrots, celery, and onion until soft.
  7. Add the shredded chicken back to the pot along with the thyme.
  8. Drop spoonfuls of the dumpling batter on top of the hot chicken mixture.
