- 1 tablespoon olive oil
- 4 slices turkey bacon
- 1 medium onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 6 cups chicken broth
- 1 cup uncooked rice
- 2 cups cooked chicken, shredded
- 1 teaspoon thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups spinach or kale, chopped
- In a large pot, heat the olive oil over medium heat.
- Add the turkey bacon and cook until crispy, then remove and set aside.
- In the same pot, add the onion, carrots, and celery, sautéing until softened.
- Add the garlic and cook for an additional minute.
- Pour in the chicken broth and bring to a boil.
- Add the rice, reduce heat, and simmer until the rice is cooked, about 15 minutes.
- Stir in the cooked chicken, thyme, salt, and pepper. Simmer for another 5 minutes.
- Finally, stir in the spinach or kale until wilted.
- Serve hot, garnished with crumbled turkey bacon.
