Chicken and Rice Soup

A delicious Chicken and Rice Soup recipe that incorporates a turkey bacon twist for added flavor.

Ingredients

  • 1 tablespoon olive oil
  • 4 slices turkey bacon
  • 1 medium onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 1 cup uncooked rice
  • 2 cups cooked chicken, shredded
  • 1 teaspoon thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups spinach or kale, chopped

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the turkey bacon and cook until crispy, then remove and set aside.
  3. In the same pot, add the onion, carrots, and celery, sautéing until softened.
  4. Add the garlic and cook for an additional minute.
  5. Pour in the chicken broth and bring to a boil.
  6. Add the rice, reduce heat, and simmer until the rice is cooked, about 15 minutes.
  7. Stir in the cooked chicken, thyme, salt, and pepper. Simmer for another 5 minutes.
  8. Finally, stir in the spinach or kale until wilted.
  9. Serve hot, garnished with crumbled turkey bacon.

Notes

  • For extra flavor, try adding some lemon juice before serving.
  • This soup can be customized with your favorite vegetables.
