- 2 cups shredded cooked chicken
- 1 ripe avocado, mashed
- 4 slices of bread
- 4 slices of cheese (Swiss or cheddar)
- 2 tablespoons mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon olive oil
- 1/2 teaspoon garlic powder
- Salt to taste
- Pepper to taste
- Preheat a skillet over medium heat.
- In a bowl, mix together the shredded chicken, mashed avocado, mayonnaise, Dijon mustard, garlic powder, salt, and pepper.
- Spread the chicken- avocado mixture on two slices of bread.
- Top with cheese slices and cover with the remaining slices of bread.
- Brush the outside of the sandwiches with olive oil.
- Cook in the skillet for about 3-4 minutes on each side, or until the bread is golden and the cheese is melted.
- Slice in half and serve immediately.
