Chicken Enchilada Crock Pot Meal

A delicious and simple chicken enchilada recipe made in a crock pot, perfect for busy weeknights.

  • 2 pounds chicken breasts
  • 2 cups enchilada sauce
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup diced bell peppers
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 2 cups shredded cheese
  • 8 flour tortillas

Instructions

  1. Place the chicken breasts at the bottom of the crock pot.
  2. Pour the enchilada sauce over the chicken.
  3. Add black beans, corn, bell peppers, cumin, and chili powder to the pot.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  5. Once cooked, shred the chicken in the pot and mix well.
  6. Layer the mixture into tortillas, sprinkle with cheese, and roll up.
  7. Serve with additional toppings as desired.
