Chicken Enchiladas

A delicious and easy chicken enchilada recipe perfect for family dinners.

  • 2 cups cooked shredded chicken
  • 1 cup enchilada sauce
  • 1 cup shredded cheese
  • 8 corn tortillas
  • 1/2 cup chopped onion
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil and sauté onions until translucent.
  3. Add shredded chicken and half the enchilada sauce, mix well.
  4. Fill tortillas with the chicken mixture, roll them up, and place them in a baking dish.
  5. Pour remaining enchilada sauce over the rolled tortillas and sprinkle with cheese.
  6. Bake for 20 minutes until heated through and cheese is melted.
