  • 4 medium zucchini
  • 1 pound ground chicken
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the zucchini in half lengthwise and scoop out the seeds to create boats.
  3. Heat olive oil in a skillet over medium heat and sauté garlic until fragrant.
  4. Add ground chicken to the skillet and cook until browned.
  5. Stir in marinara sauce, Italian seasoning, and season with salt and pepper.
  6. Fill each zucchini boat with the chicken mixture.
  7. Top with mozzarella and Parmesan cheese.
  8. Bake in the preheated oven for 25-30 minutes, or until zucchini is tender and cheese is bubbly.
