  • 1 pound cooked chicken, shredded
  • 1 cup frozen mixed vegetables
  • 1 cup diced potatoes
  • 1/2 cup turkey bacon, chopped
  • 1/2 cup heavy cream
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add turkey bacon and cook until crispy.
  2. Add chicken broth, chicken, mixed vegetables, and potatoes. Bring to a boil.
  3. Reduce heat and simmer for 15 minutes or until vegetables are tender.
  4. Stir in heavy cream, thyme, garlic powder, salt, and pepper. Cook for another 5 minutes.
