  • 6 slices turkey bacon, chopped
  • 1 medium onion, diced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups potatoes, diced
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • 1 cup frozen peas
  • 1 cup heavy cream
  • salt to taste
  • pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the turkey bacon and cook until crispy.
  2. Add the diced onion, carrots, and celery. Sauté until the vegetables are tender.
  3. Stir in the minced garlic and cook for an additional minute.
  4. Add the cooked chicken, potatoes, chicken broth, thyme, and rosemary. Bring to a boil.
  5. Reduce heat and let simmer until the potatoes are fork-tender.
  6. Stir in the frozen peas and heavy cream. Season with salt and pepper to taste.
  7. Cook for another 5 minutes until heated through. Serve warm.
