Ingredients

  • 2 cups diced chicken
  • 1 pound potatoes, peeled and cubed
  • 4 strips turkey bacon, cooked and crumbled
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and crumble.
  2. In the same pot, sauté the onion and garlic until translucent.
  3. Add the chicken and cook until no longer pink.
  4. Stir in the potatoes, chicken broth, and thyme. Bring to a boil.
  5. Reduce the heat and simmer until potatoes are tender, about 15 minutes.
  6. Stir in the heavy cream and crumbled turkey bacon. Season with salt and pepper.
