Chicken Soup with Ginger and Turmeric

Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon ground turmeric
  • 6 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 cup green peas
  • salt to taste
  • pepper to taste
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onion, carrots, and celery, and sauté until softened.
  3. Stir in the garlic, ginger, and turmeric, cooking for another minute.
  4. Pour in the chicken broth and bring to a boil.
  5. Add the shredded chicken and green peas, and simmer for 10 minutes.
  6. Season with salt and pepper, and stir in the parsley before serving.

Notes

  • Serve with crusty bread for a complete meal.
  • This soup can be made a day ahead and reheated.
