Chickpea Salad

A delicious Chickpea Salad with a unique twist of turkey bacon.

Ingredients

  • 1 can chickpeas
  • 4 strips turkey bacon
  • 1 red bell pepper
  • 1 cucumber
  • 1/2 red onion
  • 1/4 cup parsley
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Cook the turkey bacon until crispy, then chop into small pieces.
  2. Rinse and drain the chickpeas.
  3. Chop the bell pepper, cucumber, red onion, and parsley.
  4. In a large bowl, combine the chickpeas, turkey bacon, chopped vegetables, olive oil, lemon juice, salt, and pepper.
  5. Toss everything together until well mixed.
  6. Refrigerate for 30 minutes before serving to enhance the flavors.
