- 8 ounces semi-sweet chocolate, chopped
- 1/2 cup unsalted butter
- 6 large eggs, separated
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 cup heavy cream
- Preheat the oven to 350°F (175°C).
- Melt the chocolate and butter together in a double boiler, stirring until smooth.
- In a separate bowl, whisk the egg yolks with sugar until light and fluffy.
- Stir the chocolate mixture into the egg yolk mixture along with vanilla and salt.
- In another bowl, whip the heavy cream until soft peaks form.
- Gently fold the whipped cream into the chocolate mixture.
- In a clean bowl, beat the egg whites until stiff peaks form and then fold into the batter.
- Pour the batter into a greased springform pan and bake for 25-30 minutes.
- Allow the cake to cool before removing from the pan.
- Chill in the refrigerator before serving.
