  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1/2 cup sour cream
  • 1 tablespoon all-purpose flour

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a bowl, mix the graham cracker crumbs and melted butter until combined.
  3. Press the mixture into the bottom of lined muffin tins to form the crust.
  4. In a large mixing bowl, beat the cream cheese until smooth. Gradually add in the sugar and vanilla, mixing until incorporated.
  5. Add the eggs, one at a time, mixing well after each addition.
  6. Stir in the sour cream and flour until smooth.
  7. Pour the cheesecake batter over the crusts in the muffin tins.
  8. Bake for 20-25 minutes, or until the centers are set.
  9. Allow to cool, then refrigerate for at least 2 hours before serving.
