  • 1 can (14 oz) coconut milk
  • 1 cup chicken broth
  • 1 bell pepper, sliced
  • 1 cup spinach
  • 1 tablespoon lime juice
  • Salt and pepper to taste

Instructions

  1. Heat coconut oil in a large pot over medium heat.
  2. Add onions, garlic, and ginger; sauté until fragrant.
  3. Stir in the curry powder and turmeric; cook for another minute.
  4. Add the chicken thighs and cook until browned on all sides.
