Coconut Curry Chicken Noodle Soup

  • 1 pound chicken breast, diced
  • 1 can (14 ounces) coconut milk
  • 4 cups chicken broth
  • 2 tablespoons red curry paste
  • 1 teaspoon ginger, grated
  • 3 cloves garlic, minced
  • 2 cups egg noodles
  • 1 cup bell peppers, sliced
  • 1 cup carrots, sliced
  • 2 cups spinach
  • 1 tablespoon lime juice
  • 1/4 cup cilantro, chopped

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced chicken and cook until browned.
  3. Stir in the coconut milk, chicken broth, red curry paste, ginger, and garlic. Bring to a simmer.
  4. Add the egg noodles, bell peppers, and carrots. Cook for 8-10 minutes until noodles are tender.
  5. Stir in the spinach and lime juice, cooking until spinach is wilted.
