- 1 tablespoon olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon ginger, grated
- 2 tablespoons curry powder
- 1 can (400ml) coconut milk
- 2 cups spinach
- 1 tablespoon lime juice
- Salt to taste
