Corn and Zucchini Chowder

Ingredients

  • 2 cups fresh corn kernels
  • 2 medium zucchinis, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the onion and garlic, sauté until soft.
  2. Add zucchini and corn, cook for about 5 minutes.
  3. Pour in vegetable broth and thyme, bring to a boil.
  4. Reduce heat and let simmer for 15 minutes.
