Cowboy Stew is a hearty comfort food that combines tender meat and vegetables, creating a delicious meal perfect for any occasion.

  • 1 pound turkey bacon
  • 1 cup chicken ham
  • 2 cups potatoes, diced
  • 1 cup corn, frozen or fresh
  • 1 cup green beans, trimmed
  • 1 onion, chopped
  • 4 cups chicken broth
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon black pepper
  • 1 teaspoon salt

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and chop into pieces.
  2. In the same pot, add the onion and garlic, sautéing until translucent.
  3. Add the chicken ham, potatoes, corn, green beans, chicken broth, and seasonings. Bring to a boil.
  4. Reduce heat and simmer until vegetables are tender, about 30 minutes.
  5. Stir in the chopped turkey bacon before serving.

Notes

  • For a thicker stew, mash some of the potatoes before serving.
  • Feel free to add any of your favorite vegetables.
