Ingredients

  • 2 cups butternut squash, peeled and diced
  • 1 cup turkey bacon, chopped
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 teaspoon ground nutmeg
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  2. In the same pot, add onions and garlic, cooking until softened.
  3. Add the butternut squash and vegetable broth, bringing to a boil.
  4. Reduce heat and simmer until the squash is tender, about 20 minutes.
  5. Use an immersion blender to puree the soup until smooth.
  6. Stir in the heavy cream, nutmeg, salt, and pepper.
  7. Serve hot, topped with crispy turkey bacon.

Notes

  • This soup can be made ahead of time and reheated for convenience.
  • For extra creaminess, add a bit more heavy cream when serving.
