Creamy Chicken Noodle Soup

  • 1 pound chicken breast
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 3 carrots, sliced
  • 3 celery stalks, sliced
  • 6 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 cups egg noodles
  • 1 cup heavy cream
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onions, garlic, carrots, and celery, and sauté until onions are translucent.
  2. Add the chicken breast and cook until no longer pink. Remove chicken and shred it.
  3. Add chicken broth, thyme, salt, and pepper to the pot. Bring to a boil.
  4. Add egg noodles and cook until tender.
  5. Stir in heavy cream and shredded chicken. Heat through.
  6. Garnish with fresh parsley before serving.

Notes

  • For a thicker soup, reduce the amount of broth.
  • Freeze leftovers for up to 3 months.
