- 1 tablespoon olive oil
- 4 slices turkey bacon
- 1 cup diced onions
- 2 cups sliced carrots
- 2 cups diced celery
- 3 cloves garlic, minced
- 8 cups chicken broth
- 2 cups egg noodles
- 2 cups cooked chicken, shredded
- 1 cup heavy cream
- 1 teaspoon thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- In a large pot, heat olive oil over medium heat.
- Add turkey bacon and cook until crispy. Remove and crumble.
- Add onions, carrots, and celery to the pot. Cook until soft.
- Stir in garlic and cook for 1 minute.
- Add chicken broth and bring to a boil.
- Add egg noodles and cook until tender.
- Stir in shredded chicken, heavy cream, thyme, salt, and pepper.
- Simmer for 5-10 minutes.
