Creamy Chicken Noodle Soup

  • 1 tablespoon olive oil
  • 4 slices turkey bacon
  • 1 cup diced onions
  • 2 cups sliced carrots
  • 2 cups diced celery
  • 3 cloves garlic, minced
  • 8 cups chicken broth
  • 2 cups egg noodles
  • 2 cups cooked chicken, shredded
  • 1 cup heavy cream
  • 1 teaspoon thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add turkey bacon and cook until crispy. Remove and crumble.
  3. Add onions, carrots, and celery to the pot. Cook until soft.
  4. Stir in garlic and cook for 1 minute.
  5. Add chicken broth and bring to a boil.
  6. Add egg noodles and cook until tender.
  7. Stir in shredded chicken, heavy cream, thyme, salt, and pepper.
  8. Simmer for 5-10 minutes.
  9. Serve hot topped with crumbled turkey bacon.

Notes

  • Feel free to add more vegetables like peas or corn for extra nutrition.
  • This soup can be frozen for up to 3 months.
