Creamy Green Enchiladas Chicken Soup

  • 2 cups cooked shredded chicken
  • 1 can diced green chilies
  • 1 cup cream of chicken soup
  • 4 cups chicken broth
  • 1 cup sour cream
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 cups shredded cheese
  • 1 package corn tortillas
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. In a large pot, combine chicken, green chilies, cream of chicken soup, and chicken broth.
  2. Bring to a simmer over medium heat.
  3. Stir in the sour cream, garlic powder, onion powder, cumin, and cheese.
  4. Allow to cook for 10 minutes until hot and combined.
  5. In a separate skillet, lightly cook the corn tortillas until soft.
  6. Spoon the soup into bowls and top with tortillas, additional cheese, and your favorite toppings.

Notes

  • For extra flavor, you can add fresh cilantro on top before serving.
