Ingredients

  • 2 acorn squashes
  • 1 tablespoon olive oil
  • 1 cup diced onion
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1/2 cup honey
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon cinnamon

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Cut the acorn squashes in half and scoop out the seeds.
  3. Drizzle olive oil over the squashes and place them cut-side down on a baking sheet.
  4. Roast in the oven for 30-40 minutes until tender.
  5. In a large pot, sauté diced onion and garlic until translucent.
  6. Scrape the flesh of the roasted squash into the pot.
  7. Add vegetable broth and honey; bring to a simmer.
  8. Blend the soup until smooth, then stir in heavy cream.
  9. Season with salt, pepper, and cinnamon.
  10. Serve hot.

Notes

  • For a vegan version, substitute heavy cream with coconut milk.
