Creamy Lasagna Soup

  • 1 pound ground beef
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 can (15 ounces) crushed tomatoes
  • 4 cups beef broth
  • 1 tablespoon Italian seasoning
  • 8 ounces lasagna noodles, broken
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the ground beef over medium heat. Drain excess fat.
  2. Add the onion and garlic, sauté until onions are translucent.
  3. Stir in the crushed tomatoes, beef broth, and Italian seasoning. Bring to a boil.
  4. Add broken lasagna noodles and cook until tender, about 10 minutes.
  5. Stir in ricotta, mozzarella, and spinach until cheese is melted and spinach is wilted.
  6. Season with salt and pepper to taste. Serve hot.

Notes

  • For extra creaminess, add a splash of cream at the end.
  • Leftover soup can be reheated on the stovetop.
