Creamy Parmesan Cajun Chicken Pasta Soup

  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup Parmesan cheese, grated
  • 2 cups pasta of choice
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt to taste
  • 1 tablespoon olive oil
  • 1 cup bell peppers, diced
  • 1 cup onions, diced

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced onions and bell peppers; sauté until soft.
  2. Add chicken breasts and cook until browned.
  3. Pour in chicken broth and bring to a boil.
  4. Add pasta and cook according to package instructions.
  5. Reduce heat and stir in heavy cream and Parmesan cheese until melted and combined.
  6. Season with Cajun seasoning, garlic powder, onion powder, and salt to taste.
