  • 1 cup pumpkin puree
  • 1/2 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/4 cup chopped green onions
  • 1/4 cup vegetable oil (for frying)

Instructions

  1. In a large bowl, mix together pumpkin puree, flour, Parmesan, egg, garlic powder, onion powder, salt, black pepper, and paprika until well combined.
  2. Fold in the chopped green onions.
  3. Heat vegetable oil in a frying pan over medium heat.
  4. Drop spoonfuls of the mixture into the hot oil, flattening them slightly.
  5. Fry until golden brown on both sides, about 3-4 minutes each side.
  6. Remove and drain on paper towels.
  7. Serve hot with your favorite dipping sauce.

Notes

  • For extra crunch, add breadcrumbs to the mix.
